*Extra charge for carcasses that require cleaning beyond normal, this also reduces your yield.

*Add beef or pork suet to grinds $1/lb or bacon for $6/lb. I recommend a 20% addition of suet or bacon for grilling burgers and 15%-20% for home sausage making. I prefer to use pork but based on availability or upon request I will use beef or a mixture of beef and pork.

 

Sausage

*Prices include addition of necessary suet (~20%) and seasonings

*All sausage carcasses will be charged the sausage price per pound and a boning fee of $20-$30.

Cooked/Smoked Sausage

*At this time we are unable to provide smoked sausages and jerky. We are in the process of getting licensed for this. We can prepare them for you raw and you can smoke/cook them yourself.

Salami/Summer Sausage -$3.50/lb
